Malpua – Famous Indian Malpua Recipe | How to make tasty and authentic Malpua at home| मालपुआ

Malpua is one of the popular sweets in Northern Part of India, Bangladesh and Nepal where it is served during festivals along with other sweets. Amalu (Malpua) is one of the Chapana Bhoga of Lord Jagannath and is included in the Sanja Dhupa (evening prayer). It is one of the must home made sweets during the color festival, Holi, in North India. If this is made appropriately, it taste like Gulab Jamun, another one of the most popular sweets in India, now getting popular around the world.

Ingredients:

  1. All Purpose Flour—150 gms
  2. Mawa or Khoya——-50 gms
  3. Sugar——–50 gms
  4. Milk———-1 Cup
  5. Water—-1 Cup
  6. Raisins—-15-20 pieces.
  7. Fennel seeds—-1/2 tsp
  8. Pistachio & Almond for garnishing.
  9. Saffron—-1 pinch.
  10. Baking Soda—-2 pinch.
  11. Ghee for frying Malpua.

Step by Step preparation of Malpua

Step1: Making of Sugar Syrup

  1. Take a pan add sugar and water mix them well and cook it on high flame for 4-5 min or until it became sticky ( we don’t need one string syrup).
  2. once the syrup is ready switch off the flame and add saffron into it and give a stir keep it aside.

Step 2: Making of Malpua batter

  1. Take a bowl and a strainer and strain all purpose Flour and bakeing soda together to mix them well or you can mix the them by  the help of a spoon..
  2. Now Add 1/2 tsp ghee and mix it well.
  1. Now Add milk in small batches and mix it slowly to make a lump free batter.
  2. with milk you will get a thik batter now add water slowly and mix it well to make the batter thin and smoother.
  3. now add crumbled Mawa into the batter and mix it well it should be a lump free batter.
  4. if after adding Mawa batter becomes thicker add a little water and mix well. Batter should be smooth and thin like Dosa batter.
  5. Now mix fennel seeds & raisins and give a good stir. Batter is ready for frying Malpuas.
    1. Now heat the ghee to fry the Maalpuas. Once ghee becomes hot put the flame on low to medium.
    2. Fry the Maalpuas till it becomes golden brown in color from both of the sides.
    3. Now put all the Fried Malpua into the sugar syrup for 2-3 min ( sugar syrup should be warm)
    4. Take all the Malpua out from the syrup and place on a plate , garnish with finally chopped dry fruits and serve.

Important Tips: To make the tasty and authentic Malpua, we need to make sure that the Malpua batter is of correct consitancy.
