Veg Fried Rice: There is an interesting believe about veg fried rice, It is believed to have started as a way to avoid throwing away unconsumed rice, thus prevent wasting food. As a method to pleasantly and safely consume leftovers through stir-frying, since the heat from cooking prevents the propagation of dangerous microbes. Traditionally Southern Chinese prefer their rice polished and plain, as a base staple to consume flavorful seasoned meat or vegetables. The vegetables and rice leftovers from yesterday—which has passed their prime but still good to consume, are seasoned with soy sauce, lard and garlic, being stir-fried and then transformed into a hearty hot meal for the family.

The basic elements of Chinese fried rice including rice, meat or vegetables, soy sauce and garlic. Numbers of fried rice recipes has been developed in China, such as Yangchow and Szechwan fried rice. Leftover cooked rice among the Cantonese is commonly made into fried rice, prepared with chopped vegetables or meat. It is believed that the basic stir-fried technique to cook fried rice, which required Chinese wok, has spread from Southern China to other rice farming cultures in East and Southeast Asia.

Ingredients:

  1. Steamed Rice ——- 1 Bowl (250 gms)
  2. Carrot —— 50 gms (Finely chopped)
  3. Green Peas —— 50gms.
  4. Green Beans —— 50gms.(Finely Chopped)
  5. Green Pepper —— 50gms.(Finely Chopped)
  6. Cabbage  —— 50gms.(Finely Chopped)
  7. Onion —— 1 medium size(Finely Chopped)
  8. Green Chilli —— 1-2 Piece(Finely Chopped)
  9. Ginger Garlic Paste —— 1tsp
  10. Spring Onion —— For Garnishing
  11. Cooking Oil —— 2tbs
  12. Soya Sauce —— 1tbs.
  13. Butter —— 1 tsp.
  14. Black Pepper Powder —— 1tsp
  15. Salt —— per taste

Step by Step preparation of Veg Fried Rice

  1. Heat a pan and add oil to it.
  2. Once oil gets heated cook add the ginger garlic paste and green chilli and cook it for few seconds.
  3. Now add onion and green beans and cook it for 2 minutes.
  4. Add carrot and cook it for 1 minute.
  5. Now add cabbage, green peas and green pepper and cook it for 1 minute.
  6. Add black pepper powder, salt per taste and soya sauce to it.
  1. Mix it well and add butter to it..
  2. Now add steamed rice to it and mix it well.
  1. Now cook this for 2 minutes.
  2. Veg fried rice is ready. Now garnish this with spring onion and serve.

Important Tips: To make authentic and tasty veg fried rice, we need to make sure that you use lot of vegetables and it should be semi cooked.
