Makhana Kheer – Famous North Indian Kheer Recipe | How to make tasty Makhana Kheer like Restaurant at home.

Makhana Kheer : Fox nuts which is Lotus seed is very nutritious in nature. This is majorly being used in India and now being spreading out the world. This is called as Makhana in India, It is considered as superior than all other nuts as it has measures to help the diabetics and high blood pressures. Makhana Kheer is very popular in various parts of India specially during festivals. This is very good for those who does fasting either because of diet control or because of some Indian festival.

Ingredients:

  1. Lotus Seeds / Makhana   1 Bowl (50 gms).
  2. Milk   1 Liter.
  3. Sugar   4 tbs.
  4. Cashew Nuts   10-12 pieces.
  5. Raisins 10-12 pieces
  6. Pistachio 5-8 pieces (For Garnishing).
  7. Ghee 1 tsp(Optional)
  8. Green Cardamom 2-3 pieces.

Step by Step preparation of Makhana Kheer

  1. Heat a pan and dry roast the Makhanas for 4-5 min on medium flam or till it turns its color a little. Keep it aside and let it cool     down.
  2. Now take a deep pan and put milk into it let the milk come to a boil.
  3. Once milk will start boiling low the flame and let it boil for3-4 min.
  4. Mean while crush the makhanas with your hand or grind it into a corse powder
  5. Now add the crushed makhana into the milk and mix it well.
  6. Cook the makhana along with the milk for 4-5 minuets keep on stirring.
  1. Now add kaaju and let the kheer cook for30-35 min on medium to low flame or till it becomes thick (keep on stirring otherwise kheer will stick to the bottom and get burn).
  2. once the kheer will become thick add cardamom powder and mix well.
  3. Now add sugar and give a good stir.
  4. switch off the flame and add ghee and mix it well.( this will improve the taste and the texture both)
  5. makhana kheer is ready to serve ( for best taste serve chilled or cold).
  6. Garnish with some pistachios and enjoy.

Important Tips: To make the tasty and authentic Makhana Kheer, we need to make sure that Makhana is not crushed very fine.
