Aloo Puri– Famous North Indian Breakfast Recipe | How to make tasty Aloo Puri like street food at home|आलू पूरी
Aloo Puri is one of the most famous breakfast item in Indian subcontinents, specially in North India. Many Indian households prefer Puri bhaji and other traditional dishes over cereals for breakfast. Some serve it for lunch along with condiments such as dahi (yogurt) and salad. In central India, Puri bhaji is served as a street snack. Puri bhaji is a vegetarian dish and is popular in India because it is relatively inexpensive and tasty.
Ingredients:
Wheat Flour — 1 1/2 cup
Boiled Potato—5 piece(medium)
Cooking oil—1.5 tbs.
Ginger garlic paste—1tbs.
Tomato—1 medium size(Finely chopped)
Turmeric Powder—1/2tsp.
Coriander Powder—1/2tsp.
Red Chilli Powder—1/2tsp.
Dry Mango Powder—1/2tsp.
Cumin Powder—1/2tsp.
Panch Foran—1/2tsp.
Red Chilli—1 piece
Ajwain—1/2tsp.
Step by Step preparation of Puri Aloo Sabzi
Step1: Making of dough for Puries
Take a large bowl put wheat Flour into it..
Add salt, ajwain and 2-3 tsp oil into it and mix all the ingredients together.
Add water in little batches and make a smooth but hard( stiff) dough. Keep it aside for20-25 min.
Step 2: Making of Aloo Sabzi (Potato Curry)
Heat a pan and add oil to it..
Once oil becomes hot add red chili and Panch foran cook for 20-30 sec( red chili should be broken)instead of Panch foran you can use whole cumin seeds.
Now add ginger and garlic paste and cook for around 1 min.
Now Add All the dry spices with 2 tbs of water and cook for 2-3 min on low to medium flame.
Add tomatoes and salt give a good mix and cook the tomatoes with all the spices for 4-5 min with the led on.
Add chopped boiled potatoes and cook for 1 -2 min on low flame.
Now add water for gravy and give a good stir let it boil.
Once the curry starts boiling low the flame and let it cook for5-7 min with led on.
Now smash some potato and mix it well for getting a thick curry.
Cook the curry for another one min and it is ready to serve.
Step3: Making of Puries(Poori).
Take small portion of dough and make balls.
Greece the rolling Pill and Platform with a little oil( This way dough will not stick and you will get nicely shaped poori).
Make rounds with the balls as shown in the picture or video.
Heat oil in a heavy bottom pan and fry all the rounds or poories till become golden brown in color from both of the sides.
To get puffed poori slowly press the poori in the hot oil while frying as shown in the video.
Aaloo poori is ready to serve for great taste serve hot.
Important Tips: Make sure you are using lot of tomatoes while preparing the Potato curry. Also make sure the puri dough is little hard.
